Meal Plan 7/31-8/13

I took a week off and went to see some family while my boyfriend went on a work trip. I have more time to cook and make videos since I'm no longer working. I liked the job but it was always one thing after the next that caused so much stress in my life, plus we want to see how things can go with me staying at home with our daughter. Either way it has been a weight lifted off me and I am so much happier.

I've wanted to make cheese crusted for a couple weeks now. It's not something that I've seen a recipe for so I'm totally winging it. I have a bag a cheddar cheese crisps that I'm gong to crush up and use instead of breadcrumb on chicken breast. I usually get the Beef Choice Angus Fajita Seasoned Pre-Cut Strips from Walmart. I used to cut the chicken and season it but the price for the already cut and seasoned steak is low enough that I chose that. I just put it on a foil lined tray and bake in the oven along side sliced bell peppers and onion. I'm not a big fan of pancakes but my boyfriend and little one are. Nights like that are perfect for me to make something I like that they aren't the biggest fan of.

One of my favorite pasta meals in the shrimp scampi. I love like light crisp flavor of the lemon with the fat of the butter and olive oil, serving it over linguine that was cooked in very salted water just brings the meal together. I've put off making the pan seared pork chops with Dijon mustard sauce but for the life of me I don't know why. We still have so much ground deer and ground deer sausage to try to go through before deer season in November. I could make something with ground deer in it every day until then and I don't think we'd finish it. Biscuits and gravy is one of my favorite easy breakfast meals to make for dinner.
