These next two weeks are pretty simple as I start to get back to a littler bit of a normal work schedule. I still have so much deer that my family needs to eat up and my boyfriend has started fishing again so we have to plan a fish fry soon. I swear he's the best because he always saves the catfish for me since he knows its my favorite. One of the things not everyone will know on this list is Hopping Johns. I think most areas that eat this have their own way of making it. I'm from central Florida so we don't even have Hopping Johns because let's be honest once you get south of Gainesville it's not truly the south. Hopping Johns is a mix of rice, tomato, and beans. I've seen many variations of this, some add sauted onion and celery, some don't have tomato in it. I usually use white rice, a can of black eyed peas, and a can of sauted tomatoes. It's a very easy side that covers multiple food groups. This week I'm planning on making homemade hamburger helper. A new recipe I'm going to try is the creamy garlic chicken. It's another recipe I found of Pinterest. Ham and cheese sliders are something super easy I can make early in the day and heat up quickly when it's time to eat.
