Over the next few weeks my goals are to empty my inside deep freezer and have easy to make meals. I work overnight right now and take care of my daughter during the day so for me if it’s not easy it’s probably not going to happen. I use Friday's to eat any leftovers because we really don’t like food waste. Our weekends are usually busy and those are my days off cooking. That’s why I’m glad my boyfriend likes grilling. There’s a few items that I’ll be able to make ahead, which I love.
The first week: for my chicken quarters I like to marinade then for as long as possible and I’ll usually slow roast them in the oven on 250 and broil them on low for a couple minutes while keeping an eye on it. Every time the meat falls off the bone but the skin is so crispy. For easy to make pork chops I just dust it in seasoned flour and pan seared in butter. Super simple and one of my favorite comfort foods.
The second week: I haven’t made deer sliders before so I’m going to have to wing it. It’s taken me a while to get used to cooking with such a lean meat but when you live in the country and date a country man you have to adapt. Based on what he said I’ll have to add some type of binder like egg or breadcrumbs. I’m planning on posting a TikTok video of how I make it. The pork tacos I cube pork chops into bite sized pieces and cook them on high heat and add taco seasoning. Anytime I make a casserole I at least double it and freeze the rest for easy to heat meals.
